Stir-Fried Mixed Veggies


Those among you who are mothers and are having a hard time getting your children to eat vegetables, give this quick meal a try! It is simple, tasty and can be done in, at most, 15 minutes – preparation included. The cooking itself takes no more than 5 or 6 minutes. This dish is good enough to be a vegetarian meal or can be served with a fish or meat viand. Its purely vegetarian base, naturally, means that this dish is also very healthy.

Ingredients:




3-4 cloves garlic, crushed or minced
1 medium-sized red onion, chopped finely
2 packs tofu (8 pieces), sliced into small cubes
1 pack sweet peas (about 100 grams), tips sliced off both ends
2 medium-sized carrots, sliced across
1 pack oyster mushrooms (about 200-300 grams)
1 small bundle Chinese cabbage
pinch of salt
pinch of black pepper
pinch of paprika
¼ cup soy sauce
2 tablespoon oyster sauce
2 tablespoon ketchup




Instructions:
  1. Fry tofu in oil until golden brown. Set aside.
  2. Sauté garlic in oil. Stir until golden brown.
  3. Add chopped onion and stir for half a minute.
  4. Add sliced carrots; stir for 1 to 2 minutes.
  5. Add sweet peas; stir for about a minute.
  6. Add salt, paprika and black pepper. Continue stirring.
  7. Add the Chinese cabbage and oyster mushrooms. Stir for just a minute more.
  8. Add the soy sauce, oyster sauce and ketchup. Also add the tofu back in.
  9. Stir until everything is well blended.
  10. Turn off the heat.

Makes 3-4 servings.
